Pioneer Woman's Olive Cheese Bread - OH MY GOODNESS!!!

We had our Christmas Eve party this year as pot-luck and I decided to give Pioneer Woman's Olive Cheese Bread a try.  The recipe is dead simple.  Let me just say what everyone at the party said "Oh my goodness!!!  This bread is the BOMB!  Give me the recipe!"  And it was the bomb and I suppose it should be, with almost a pound of cheese and a full stick of butter...

Ingredients

  • 1 loaf French Bread
  • 6 ounces, weight Pimiento-stuffed Green Olives
  • 6 ounces, weight Black Olives
  • 2 stalks Green Onions (scallions)
  • 1 stick Butter, Room Temperature
  • 1/2 cup Mayonnaise
  • 3/4 pounds Monterey Jack Cheese, Grated

Preparation Instructions

Roughly chop both black olives and pimiento-stuffed green olives. Slice green onions into thin pieces.
Combine butter, mayonnaise, cheese, olives and green onions in a mixing bowl. Stir together until thoroughly combined. Spread mixture onto French bread that has been sliced lengthwise. Bake at 325ºF for 25 to 30 minutes or until cheese is melted and browning.
Mixture can also be refrigerated (up to two days) and used as a dip. Great with crackers.

*Jalapeno Popper Dip, yes, thats right, Jalapeno Popper DIP!

Almost everyone I know loves jalapeno poppers, fresh jalapeno peppers seeded and cored filled with a mixture of cream cheese and sharp cheese, wraped in a slice of bacon and grilled or broiled to perfectness, yes those! This dip taste JUST like the stuffed pepper. You will have an "oh my goodness, oh - my - good-ness!" moment when you taste it. It is THAT good.

Jalapeno Popper Dip

What you need:
1 tablespoon butter
1/2 cup finely diced onion
2 fresh jalapenos, cored and seeded, finley chopped
1 clove garlic, minced
5 strips bacon, crisply cooked and crumbled
1/4 teaspoon cumin
1 (8oz) package of cream cheese, room temp.
1/2 cup mayo
2/3 cup shredded sharp cheddar cheese
1/4 cup Italian blend shredded cheese
1/4 cup pickled jalapenos, finley chopped

Topping:
1/2 cup plain bread crumbs
1/2 cup shredded cheese mixture (sharp/Italian blend)
1/4 teaspoon paprika

Heat your oven to 350 degrees and greese a small casserole pan.

1. Set your cream cheese out and allow to come to room temp. At least 2 hours.
2. Start cooking your bacon.
3. While your bacon is cooking, chop your onion, fresh jalapeno peppers, garlic, and pickled jalapenos.
4. Remove crispy bacon from pan to a plate for later. Drain bacon greese from skillet and add 1 tablespoon butter. Allow butter to melt.
5. When butter is melted, add onion, fresh jalapenos, garlic, and cumin. (do not add pickled jalapenos) Cook mixture till the onions begin to soften.
6. While your onion mixture is cooking, in a medium bowl, mix 8 oz. package of cream cheese with 1/2 cup mayo, stir till well combined. Add the sharp and Italian cheese and the chopped pickled jalapenos and mix well.
7. Add the sauteed onion mixture and the crumbled bacon into your cream cheese mix and blend well.
8. Spread the mixture into your prepared small casserole dish. Top with shredded cheese, bread crumbs, and paprika.
9. Bake for 20 to 25 minutes, till golden on top.
10. Serve with corn chips.

Homemade Egg Rolls

What you need:

1 package egg roll wrappers
1 bag of Coleslaw mix
1/4 to 1/2 pound of cooked chicken, shredded.
1/4 to 1/2 jar of Kikkoman stir fry sauce to taste
1 egg, beaten
Oil

In a large bowl combine your cooked shredded chicken with the bagged coleslaw. Add Kikkoman stir fry sauce to taste and mix well.
Fill egg roll wrappers following the directions on the back of the egg roll wrapper package, using the beaten egg to seal the wrapper. They are very easy to roll.

Heat oil in a skillet or fryer to 350. Fry egg rolls three or four at a time. Serve hot with your favorite sauce. We love sweet and sour.

You may use the entire package of egg roll wrappers or not, depending on how full you fill them. You can also half the recipe.
The cole slaw mix can be found in your grocery store with the other bagged fresh spinach and salad mixes. The egg roll wrappers are usually close by.
I use chicken tenders that I boil, cool, and shred. You could use any chicken, even leftovers. You could also use pork or shrimp.
